This dish is super fresh and perfect for summer.

Ingredients:
340g of your chosen pasta
150g of fresh or frozen peas (If frozen please defrost)
1 tsp lemon zest
64g ricotta
2 tsp Green pesto
1 tbsp Chives
Method: Number of Servings 4 / Prep Time 10 Minutes – Cook Time 20 Minutes
1. Cook your chosen pasta following the packet instructions.
2. While the pasta is cooking pulse half the cup of peas, ricotta, lemon juice and 1 or 2 tsp of pesto.
3. Keep some peas unblended to sprinkle on top.
4. Once the pasta has cooked drain and then put back into the saucepan, add the sauce and the rest of the left over peas, mix well.
5. Serve by sprinkling chopped chive on top.
