Try this tomato based potato salad, perfect for a summer side dish.

Ingredients:
1 tbsp of olive oil
1 onion
1 or 2 garlic gloves, crushed and chopped small
1 tsp of oregano or 1 leaf chopped small
1 tin (400g) of chopped tomatoes
300g new potatoes
25g Olives
100g Roasted peppers
Method: Number of Servings 4 / Prep Time 10 Minutes – Cook Time 25 Minutes
1. Begin by heating a pan and adding the olive oil, once warm add the onions and cook for 5 – 10 minutes or until soft. Once the onions has become soft add the garlic and the oregano and cook for a few minutes. Add the tin of tomatoes and the peppers, season with salt and pepper and leave to cook for 10 minutes.
2. Boil a pan of water and cook the new potatoes for 10-15 minutes or under tender. After they have cooked drain well and add in the sauce. Serve by sprinkling the olives on top.
