Manju Malhi is an award winning British-born chef and food writer, specialising in Anglo-Indian cuisine. She was brought up in North West London where she grew up surrounded by Indian culture, traditions and lifestyles. However, she spent several years of her childhood in India where she explored and experienced the vast and varied cuisines of the country. Malhi has come up with her own self-styled “Brit-Indi” style of food, which mixes Indian and Western influences.

Ingredients:
Juice of half a lemon
1 garlic clove, minced or finely chopped
1/2 tsp sweet paprika
A pinch of ground cinnamon
A pinch of freshly ground black pepper
A pinch of fine sea salt
1 tsp runny honey
1 tbsp olive oil
1 x 400g can of chickpeas, drained
1 red onion, chopped
1 tomato, chopped
1 yellow pepper, chopped
1/2 green chilli, finely chopped
A few washed and chopped coriander or flat parsley leaves
Method: Number of Servings 4 / Prep Time 10 minutes
1. Prepare the dressing by mixing the lemon juice, garlic, paprika, cinnamon, pepper, salt, honey and olive oil together in a small bowl.
2. Just before serving, mix the chickpeas with the onion, tomato, pepper, chilli, if using, and coriander or parsley leaves. Pour over the dressing and serve immediately.
