[Sticky] Halloumi Skewers

Try these delicious skewers, perfect for a BBQ or cooked in the oven.

Halloumi Skewers

Ingredients:

225g of low fat halloumi cheese, if following a low carb approach use full fat instead
1 medium red onion
15 cherry tomatoes
2 courgettes

For the dressing

1 tbsp olive oil
2 tbsp lemon juice
2 tsp thyme leaves (lemon thyme)
1 tsp Dijon mustard

Method: Number of Servings 4 (2 skewers each)/ Prep Time 15 minutes – Cook Time 5 minutes

1. Begin by cutting the courgettes length ways and then cut them into thick wedges, also cut the onions into wedges. Cut the halloumi into thick chunks to ensure they do not split. Thread the halloumi, tomatoes, courgettes and onion onto the skewers. This recipe should make about 8 skewers. Cover the skewers and place in the fridge until you are ready to cook them.

2. For the dressing mix the olive oil, lemon juice, mustard and thyme.

3. Before cooking on the BBQ or in the oven brush the dressing over the kebabs and cook for 5 minutes.
