These leeks are the perfect dinner party starter or side dish!

Ingredients:
8 leeks
1 tsp olive oil
2 tsp coriander seeds
3 thyme sprigs (approximately 10g)
2 bay leaves
125ml white wine (dry)
1 garlic clove with the skin on, bashed
85g green olive, very roughly chopped, optional (nutritional info includes these)
Large handful chopped flat-leaf parsley to serve, optional (nutritional info includes these)
Method: Number of Servings 4 / Prep Time 10 Minutes – Cook Time 15 Minutes
1. Begin by cutting the dark green part off the leeks and strip away the first few layers. Cut in half lengthways, keep the root attached and wash the leeks.
2. Put all the ingredients except the olives and parsley into a large pan with 200ml of water, season with salt and pepper.
3. Put the leeks into the pan, cover and cook on a low heat. Turn them regularly. Once tender remove and leave to cool. Add in the parsley and olives (optional).
