A Japanese-Mediterranean fusion!

Ingredients:
1 aubergine
2 tbsp miso paste
1/2 tsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp extra virgin olive oil
Method: Number of Servings 2 / Prep Time 10 Minutes – Cook Time 10 Minutes
1. Chop the aubergine in half, lengthways, and fry either side with a dash of olive oil on medium heat for 4-5 minutes.
2. Add miso paste, honey, soya sauce, rice vinegar and olive oil to a jar or bowl and mix well.
3. Turn on your grill. place aubergine flesh up on a baking tray and spread with paste.
4. Grill for approximately 5 minutes and then serve!
Serving suggestion: fresh salad or stir-fried Asian vegetables
