A super quick and easy evening meal, that's also vegetarian!


Ingredients:
Method: Number of Servings 2 / Prep time 10 minutes – Cook time 30 minutes.
1. Begin by cutting up your courgette, pepper and red onion. Add them to the frying pan with the oil and cook until soft (about 5-10 mins).
2. Slice the halloumi into strips add to the frying pan along with the cherry tomatoes, garlic and basil, cook for 5-10 mins.
3. Boil a kettle and add your stock cube to 150ml of boiling water, mix until dissolved in a heat proof jug. Once dissolved add the tomato paste, balsamic vinegar to the jug and mix together and add to the frying pan. Cook for a further 5-10 mins.
4. Serve with a side of rocket.
