Why not try this healthy alternative to potato crisps. Kale crisps are suitable for any dietary approach and can be kept for a few days in an airtight container.

Ingredients:
200g kale (thick stems removed)
2 tsp (10ml) olive oil
salt to taste
parmesan or cayenne to taste (optional)
Method: Number of Servings 4 / Prep Time 10 Minutes – Cook Time 25 Minutes
1. Preheat the oven to 140°C/120 °C fan/gas 1
2. Tear the kale into pieces and toss together with olive oil to coat
3. Spread the kale out over 2 baking trays, making sure the leaves don’t touch
4. Scatter with salt (this step can be done now, or after removing from the oven)
5. Cook for 10 minutes, then turn and cook for a further 15 minutes until crisp
6. Sprinkle with parmesan or cayenne (optional)
7. Remove from the oven and store in an airtight container for up to 3 days
