A simple vegetarian dish which is low in calories and takes no time at all to make.

Ingredients:
60g cous cous (dry)
80g frozen peas
½ red onion (finely diced)
2 carrots (finely diced)
1 tbsp extra virgin olive oil
3 large peppers
100g mozzarella
½ tsp paprika
½ tsp ground cumin
Salt and pepper to taste
Method: Number of servings 3 / Prep Time 15 minutes – Cook Time 40 minutes
1. Preheat the oven to 180C
2. Combine the cous cous with 100ml boiling water, mix and leave to stand until all water is absorbed. Mix again and set aside
3. Heat the olive oil in a small pan and lightly fry the onion, peas and carrot. Once soft, remove from the heat and combine with the cous cous, paprika, cumin, salt and pepper
4. Slice the peppers in half, length ways and distribute the cous cous mixture evenly throughout the peppers
5. Slice the mozzarella and place a piece on top of each pepper
6. Bake for 25-30 minutes and serve hot
