Try our low carb bread muffins! They go great with homemade soup.

Ingredients:
1 egg
1 tbsp water
1 tbsp olive or coconut oil
1 heaped tbsp (30g) ground almonds
1 heaped tbsp (20g) golden flax seed (milled)
3/4 tsp baking powder
1 pinch sea salt
optional: 1 tsp of seeds such as chia seeds
Method: Number of Servings 1 (86g per portion) / Prep Time 5-10 Minutes – Cook Time 2 Minutes
1. In a small glass dish or ramekin, whisk egg with olive oil and water
2. Whisk in remaining ingredients
3. Microwave on high for two minutes or until the muffin feels firm to the touch
4. Leave to cool
Serving suggestion: slice horizontally and toast or fill with your favourite ingredients
