Try courgette spaghetti, a healthy alternative to pasta.

Ingredients:
4 courgettes
25g butter
10ml extra-virgin olive oil
1 clove garlic (crushed)
salt & pepper to taste
Method: Number of Servings 4 / Prep Time 10 Minutes – Cook Time 5 Minutes
1. Wash, dry, top and tail the courgettes
2. Use a potato peeler to peel strips. Work until you hit seeds and turn the courgette over and work on the other side
3. Using a cook’s knife cut into strips as evenly as you can manage and to your preferred thickness
4. Heat the butter, olive oil and garlic gently. Add courgette and toss around for about 4 minutes. Add some freshly ground pepper and a pinch of sea salt
