Why not try swapping mac 'n' cheese for this lower carb alternative?

Ingredients:
80g grated cheddar
25g butter
25g plain flour
400ml whole milk
1 large cauliflower (750g)
30g grated parmesan
salt to taste
pepper to taste
Method: Number of Servings 4 / Prep Time 15 Minutes – Cook Time 45 Minutes
1. Melt the butter in a saucepan, stir in the flour and cook for 1-2 minutes. Remove from the heat
2. Gradually stir in the milk to get a smooth sauce. Return to the heat, stirring all the time. Bring to the boil
3. Gently simmer for 8-10 minutes, adding salt and pepper to taste
4. Remove from the heat, stir in the cheese and allow to melt
5. Set sauce aside and chop cauliflower into separate small heads
6. Pre-heat the oven to 200°C/180°C fan/gas 6
7. Lightly boil cauliflower to soften (7-8 minutes)
8. Place cauliflower into an oven dish and top with cheese sauce
9. Bake for 10 minutes then sprinkle parmesan over the top and return to the oven for a further 10-15 minutes, until parmesan starts to crisp
10. Serve, adding salt and pepper to taste
