Why not try swapping high carb crackers for this low carb alternative?

Ingredients:
3 tbsp psylium husk
470ml water
200g pumpkin seeds
100g sesame seeds
70g brown linseeds
10g black sesame seeds
2 tsp cumin seeds or fennel seeds
1 tsp salt
silicon paper or a silicon mat
Method: Number of crackers 30 / Prep Time 20 Minutes – Cook Time 1 Hour
1. Preheat the oven to 150°C
2. In a bowl mix together the water and psyllium. Leave it to stand for about 10 minutes. It should thicken up and almost go the texture of slime. (Don’t panic, that’s what it is supposed to do!)
3. In a separate bowl, mix together the other ingredients
4. Pour the gloopy water mixture into the seed mixture and mix well to combine
5. Line a baking tray with silicon paper or a silicon mat. Wax paper doesn’t work
6. Spoon a tablespoon of the mixture onto the paper and spread it into a round shape, about 2mm thick. Make sure there are no holes or bubbles and that you leave about 2cm of space between the crackers
7. Bake in the oven for about an hour. The crackers are done when they are crispy.
