Manju Malhi is an award winning British-born chef and food writer, specialising in Anglo-Indian cuisine. She was brought up in North West London where she grew up surrounded by Indian culture, traditions and lifestyles. However, she spent several years of her childhood in India where she explored and experienced the vast and varied cuisines of the country. Malhi has come up with her own self-styled “Brit-Indi” style of food, which mixes Indian and Western influences.

Ingredients:
40g 85% dark chocolate
40g cocoa powder
250ml semi skimmed milk
Pinch of ground cinnamon
A few chocolate gratings, to garnish
Method: Number of Servings 2 / Prep Time 5 minutes – Cook Time 5 minutes
1. Break the chocolate into small pieces and place in a small heavy-based pan with all the other ingredients.
2. Simmer gently for 5 minutes, whisking occasionally, until the chocolate has dissolved.
3. Strain the mixture through a nylon sieve and serve immediately in small espresso cups sprinkled with a few chocolate gratings.
