Each Yorkshire pudding has only 1.9g of carbs!

Yorkshire Puddings

Ingredients:

40g Soya/almond/coconut flour (or a lower carb flour of your choice)
3 medium eggs
100ml of whole milk (or 25ml double cream & 75ml water)
Pinch of salt/pepper
6 tbsp of extra virgin oil/animal fat

Method: Number of Servings 6 / Prep Time 15 Minutes – Cook Time 45 Minutes

1. You can use a muffin baking tin or a Yorkshire pudding tin to make these
2. Heat the oven to 190C
3. Pour a small amount of oil or heaped teaspoon of lard/dripping into 6 muffin/pudding holes and heat in the middle of the oven for between 10-15 minutes until really hot. (This is the secret of well-risen Yorkshire Puddings with any flour)
4. While the fat is heating the Yorkshire pudding batter can be mixed
5. Mix all the ingredients together in a bowl using a whisk until fully blended, and leave the mixture to rest until the fat is hot enough for the puddings
6. Pour the mixture over the sizzling hot fat evenly between the six holes (be careful that the fat doesn’t splash out and burn you!)
7. Place in the centre of the oven and bake for approximately 30 minutes until risen and golden brown
8. Remove from the oven and serve immediately
