These delightful truffles are perfect for any chocolate cravings.

Ingredients:
Juice and zest of 2 limes and 1 lemon
325ml Double cream
65g Unsalted butter- diced
500g Bitter dark chocolate (85%)
Cocoa powder for dusting
Method: Makes 50 truffles / Prep Time 10 Minutes – Cook Time 40 Minutes
1. Place the zest and juice in a saucepan with the cream. Bring up to the boil then take of the heat to infuse for half an hour. Strain through a sieve squeezing as much through as possible.
2. Gently melt the chocolate in a stainless steel bowl over a bain marie.
3. Add the butter to the infused cream and warm to dissolve the butter. Whisk into the chocolate mix until smooth. Chill.
4. When fully chilled, beat, ideally in a food mixer for a minute. Roll into 1inch balls then toss into cocoa powder and chill.
