Friends and family round this summer, our ice cream is the perfect treat.

Ingredients:
4 egg yolks
4 tbsp zero or low-calorie sweetener (such as Erythritol, Truvia, Stevia or Xylitol)
500ml double cream
1 tsp vanilla essence
Method: Number of Servings 6 / Prep Time 20 Minutes – Freeze Overnight
1. Beat sweetener and egg yolks with an electric mixer until pale and creamy.
2. Whip cream in another bowl until soft peaks form.
3. Gently fold in sweetener/ egg yolk mix
4. Pour into plastic container with a tight fitting lid and freeze overnight.
N.B. If using erythritol melt in boiling water to prevent a granulated texture. Also if you add in several tsp of glycerine at the end it will make the ice cream easier to scoop straight out of the freezer.
