Of course you can enjoy something sweet, indulgent and low carb. These chocolate filled ginger biscuits are definitely one of our favourite recipes.

Ingredients:
Biscuits
200g ground almonds
2 tbsp granulated sweetener
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking power
1/4 tsp salt
1 large beaten egg
2 tbsp butter, melted
2 tsp vanilla extract
Chocolate filling
5 tbsp butter
50g chocolate (80% cocoa)
2 tbsp sweetener
25g cocoa
1/4 tsp vanilla extract
Method: Number of Servings 15 (35g per serving) / Prep Time 20 Minutes – Cook Time 20 Minutes
1. Whisk together almonds, sweetener, ginger, cinnamon, baking powder and salt. Add egg, butter and vanilla
2. Form a dough and roll out (1/2cm thick). Cut into circles (5cm diameter) and place on baking sheet
3. Bake for 15 minutes at 150°C until firm and golden
4. Melt butter, chocolate and sweetener over a low heat. Add cocoa and vanilla and whisk. Remove from heat
5. When cool, add filling between 2 cookies
