If it's a bit cold and wet outside and you need something tasty and filling look no further than this wholesome and low carb cottage pie.

Ingredients:
1 large cauliflower, approx. 840g
500g beef mince
250g borlotti beans
2 x medium onions, approx. 220g
2 x carrots or celery, approx. 128g
100g soft cheese
30g cheddar cheese, half fat
2 x beef stock cubes
1 tsp English mustard
Method: Prep Time 30 minutes / Cook Time 50 minutes
1. Steam the cauliflower until tender, then drain thoroughly.
2. Blend the cauliflower until smooth, then add to a saucepan with the cream cheese, cheddar and mustard. Stir until even and add salt and pepper to taste.
3. Brown the mince in a large pan with the chopped onion and carrots/celery until vegetables have reduced. Add the drained borlotti beans and crumbled stock cubes and cook for a few minutes more.
4. Add the mince mixture to a large over-proof dish and press into the bottom. Top with the cauliflower mixture and distributed evenly. Brush with a little butter if desired.
5. Place in a preheated oven (200C conventional / 175C fan) and bake for about 20 minutes or until the top is golden.
6. Remove from the oven and allow to rest for a few minutes before serving. Goes great with green veg.
