A comforting and easy-to-make stew that’s packed with flavour!

Ingredients:
1 tbsp extra virgin olive oil
1 medium onion, sliced
1 carrot, chopped
1 celery stick, chopped
200g chestnut mushrooms, sliced
2 cloves of garlic, crushed
1 tbsp tomato puree
1 tsp dried thyme
1 tsp smoked paprika
1 400g tin chopped tomatoes
1 400g tin of brown lentils, drained & rinsed
200ml vegetable stock
Salt & Pepper to taste
Method: Number of Servings 2 / Prep time 10 minutes / Cook time 30 minutes

1. Heat the oil in a large frying pan over a medium heat, add the onion, carrot and celery, cook for about 5 mins until soft.
2. Add the garlic and mushrooms and cook for a further 5 mins until the mushrooms start to release their water.
3. Mix in the tomato paste, thyme and paprika and cook for another minute.
4. Add the tomatoes, lentils, and stock, simmer for approx. 20 mins.
5. Add salt & freshly ground black pepper to taste.
