A hearty warming soup that freezes well and is less than 60p a portion!!

Ingredients:
1tbsp Extra Virgin Olive oil
1tbsp butter
2 onions, sliced
2 large leeks, trimmed, thinly sliced and washed
2 baking potatoes, peeled and cubed
2 vegetable stock cubes (Knorr stock pots are great)
1lt water
200ml milk
Salt & black pepper
Method: Number of Servings 6 / Prep time 10 minutes / Cook time 30 minutes
Cost 0.56p per serving
1. Add the oil and butter to a large pan and put on a medium heat. Add the onions and leeks and cook for about 5 mins, with a lid on, stirring occasionally.
2. Add the potatoes, stock cubes and water. Add a little salt and black pepper then simmer with the lid on for about 25 mins.
3. Take off the heat, add the milk (and a splash of cream if you are feeling decadent). Check the seasoning and serve.
4. Freezes really well if there are any left-overs.
