The perfect sweet treat!

Ingredients:
84g (3oz) pinto beans
200g (7oz) self-raising flour
½ tsp cinnamon
½ tsp mixed spice
56g (2oz) butter
56g (2oz) dark brown sugar
84g (3oz) clear honey
1 egg, beaten
84g (3oz) chopped walnuts
Method: Number of servings 12 (61g per serving) / Prep Time overnight then 25 minutes – Cook Time 2½ hours
1. Soak pinto beans overnight, drain then boil for 1 ¼ – 1 ½ hours until tender; drain and mash.
2. Set oven to 180°C/Gas Mark 4. Grease and line a 450g (1lb) tin.
3. Sift dry ingredients into a bowl. Heat butter, sugar and honey in a pan until melted. Cool to lukewarm.
4. Add dry ingredients to the cooled butter, sugar and honey together with the egg, beans and two-thirds of the nuts and mix.
5. Spoon into a tin. Sprinkle with rest of nuts & bake in a preheated oven for 1 hour or until a skewer comes out clean.
6. Turn out of the tin and cool on a rack.
