A delicious and simple frittata dish that is perfect for any meal of the day. A really tasty option for a low carb meal.

Ingredients:
500g spinach leaves, washed and chopped
2 tbsp extra-virgin olive oil
1 medium onion, chopped
1 large clove garlic, minced
9 large eggs
2 tbsp cream
2 tbsp sun-dried tomatoes, chopped
Salt and ground pepper to taste
80g goats cheese
Method: Number of Servings 4 (318g per serving) / Prep Time 15 minutes – Cook Time 15 minutes
1. Preheat oven to 200°C. Whisk eggs and cream together in a bowl, add sun-dried tomatoes and salt and pepper
2. Saute onions and garlic in olive oil in an oven-proof, non-stick frying pan, until translucent. Add spinach and cook for 2-3 minutes.
3. Spread out this mixture evenly and cover with egg mixture. Lift up the spinach with a spatula to let the egg flow underneath
4. Sprinkle with goats cheese. When the frittata is half set, put the pan in the oven. Bake for 13-15 minutes until puffy and golden
