This dish looks like you have been slaving in the kitchen for hours but actually takes very little time and effort and tastes delicious, Enjoy!

Roasted Pepper & Feta Tart

Ingredients:
1x pack ready rolled puff pastry (375g)
2x yellow peppers – sliced
2x red peppers – sliced
2x red onions – sliced
2x tbsp. extra virgin olive oil
Salt & freshly ground black pepper
1x block feta cheese (200g approx.)

Method: Number of servings 4 large portions or 6 smaller ones / Prep time 10 minutes / Cook time 30 minutes 

Cost per serving – £0.87 per portion (6x portions), £1.30 per portion (4x portions)

1. Add the pepper and the onion to a large baking tray, drizzle with the olive oil, season with salt and pepper and roast in the oven at 200C for approx. 10 minutes or until softened

2. Meanwhile unroll the pastry and transfer to a large baking sheet, make a score line with a knife about 1cm all the way around the edge of the pastry rectangle, make sure you do not cut through the pastry

3. Remove the peppers and onions from the oven and leave to cool for a short period of time then pile into the middle of your pastry, ensure that you fill up to the scored border than you made

4. Crumble on the feta cheese and put back into the oven at 190C and bake for about 30mins until the pastry edges are puffed up and golden and crisp
