This light and fresh salad is perfect for a summer BBQ or picnic. You don’t need to weigh any of the ingredients, add in what you like!

Easy Greek Salad

X-PERT Health Greek Salad Recipe

Ingredients:

Dressing

6 tbsp extra virgin olive oil
2 tbsp lemon juice
½ tsp chopped garlic
1 tsp red wine vinegar
½ tsp dried oregano
½ tsp dried dill (optional)
Salt & freshly ground black pepper

Salad

250g cherry tomatoes, halved/chopped small
¾ cucumber, chopped small cubes
1 red onion, finely chopped
2 peppers, chopped small, (yellow/orange or green)
100g olives, halved (black or green, whichever you prefer)
100g feta cheese

Method: Number of Servings 6 / Prep Time 15 Minutes 

Cost per serving – approx. £0.75

1. Make the dressing – add all the dressing ingredients in a small jug, whisk and season with salt and pepper

2. Combine all the salad ingredients in a large bowl, add in the dressing and crumble the feta on top
