A delicious and tasty soup that is fresh and zings with flavour. Perfect anytime of the year.

Ingredients:
Half a medium-to large sized head of broccoli
1 tbsp extra virgin olive oil
2 spring onions
125g frozen peas
1 tbsp mint leaves
1 tbsp parsley, chopped
Salt and freshly-ground black pepper
Method: Number of servings 2 / Prep Time 10 minutes – Cook Time 20 minutes
1. Chop the broccoli stalk finely. Heat the oil in a large saucepan and add the broccoli stalk and spring onions. Cover the pan and cook, stirring occasionally, for five minutes.
2. Add the water, bring to the boil, turn down to a simmer and cook for ten minutes.
3. Add the frozen peas and broccoli florets, bring back to a simmer and cook for another five minutes.
4. Take off the heat, add the mint and parsley, and a decent amount of salt and puree using a hand blender.
5. You can top with smoked streaky bacon, fried and chopped, a good handful of grated cheese, boiled eggs, some more mint and a hefty grating of black pepper.
