Ingredients:
2 aubergines
6 tbsp extra-virgin olive oil
100g raw unsalted cashews
50g fresh coriander
2 cloves of garlic, minced
Method: Number of Servings 3 / Prep Time 10 Minutes – Cook Time 35 Minutes
1. Preheat the oven to 170°C
2. Slice aubergines in half and place, sliced side up, on a baking tray. Drizzle with oil.
3. Bake until tender (approx. 25 minutes)
4. Blend cashews, coriander, garlic and 5 tbsp of olive oil to form a chunky paste. Add water if necessary.
5. Spread paste on top of aubergines. Grill until golden.
*Serving suggestion – vary the toppings e.g. add crumbled feta.
