This dish is full of protein and super tasty!

Sweet Chilli Salmon with Rice & Broccoli

Ingredients

2 Boneless Salmon Fillets
150g Long Grain Rice
8 Frozen Broccoli Florets
1 tbsp Sweet Chilli sauce
1 tbsp Lemon Juice

Method – Number of Servings 2 / Prep Time 2 minutes / Cook Time 20 minutes 

Cost per serving £2.60

1. Pre-heat the oven to 210°C/Fan 190°C/Gas 6

2. Begin by seasoning the salmon with sweet chilli sauce and lemon juice then wrap each fillet loosely in tinfoil and place in the oven for 20 minutes.

3. Place 75g of rice per person into a sieve and rinse well under cold, running water. Add a pinch of salt (if required) to a large pan of water and boil. Cover and simmer for 15 minutes or until rice is tender.

4. Meanwhile, boil a pan of water and cook the frozen broccoli florets for around 5 minutes.

5. Serve and season with salt and pepper if required.
