Parma Ham Wrapped Pork With Rosemary Potatoes

Ingredients:

1 (350g) pork fillet joint
6 slices Parma ham
400g new potatoes
2 tbsp extra virgin olive oil
30g fresh rosemary
Salt and pepper to taste

Method: Number of Servings 2 / Prep Time 15 minutes – Cook Time 40 minutes

1. Preheat the oven to 180C
2. Wrap the Parma ham around the pork fillet and wrap in foil. Place in the centre of the oven and cook for 30 minutes
3. Whilst the pork cooks, slice the new potatoes in half, place in a pan and add water, bring to a boil (4-5 minutes) and then drain water
4. Mix softened potatoes with the olive oil and rosemary and place in the oven until the potatoes are crisp on top (20-25 minutes)
5. After the pork has cooked for 30 minutes, remove the foil and cook for a further 10 minutes to crisp up the Parma ham
6. Once ready, slice the pork and serve hot
