A classic pasta dish that's sure to impress anyone who try's it!

Pancetta and Tomato Penne

Ingredients:

100g whole wheat penne pasta
100g pancetta
100g sweet peppers
Tinned tomatoes x1
Fresh basil and parsley
½ garlic clove
1 tbsp extra virgin olive oil
30g parmesan cheese
Salt and pepper to taste

Method: Number of Servings 2 / Prep Time 5 minutes – Cook Time 25 Minutes

1. Lightly boil the pasta in salted water.
2. Heat up the olive oil in a large pan and add the pancetta, cooking until the edges turn crispy.
3. Finely slice the sweet pepper and garlic and add to the pancetta.
4. Strain the pasta and add to the mixture, alongside the tinned tomatoes.
5. Turn the heat down and simmer until sauce reduces, add basil and parsley.
6. Serve with a sprinkle of parmesan cheese on top.
