Who doesn't love a piece of cake with a brew? This recipe couldn't be more simple and definitely worth the wait.

Ingredients:
500g (1lb) mixed dried fruit
450ml (3/4 pint) strained tea
2 eggs, beaten
300g (10oz) self-raising flour
Method: Number of Servings 12 (98g slices) / Prep Time 4 hours – Cook Time 2 Hours
1. Put the dried fruit in a bowl and stir in the tea.
2. Leave for at least 4 hours or preferably overnight.
3. Stir in eggs and flour.
4. Turn into a 1kg (2lb) greased & lined loaf tin and flatten the top.
5. Bake in a preheated oven at 170°C/Gas Mark 3, for 1½-2 hours, or until a skewer inserted into the centre of the loaf comes out clean.
6. Turn out of the tin and cool on a wire rack.
