Ingredients:
2 white fish fillets
1 egg, beaten
2 tbsp flour
salt and pepper (to heavily season)
2 tsp butter (for frying)
2 baby gem lettuces
1 small onion, diced
1/2 stockpot or cube
110g frozen peas
2 tbsp double cream
Method: Number of Servings 2 / Prep Time 15 minutes – Cook Time 25 minutes
1. Dip fish fillets into the egg and then coat with seasoned flour. Make sure both sides are covered.
2. Add fish fillets to a medium heated large frying pan with a knob of butter.
3. Add diced onion to another medium heated frying pan with butter and fry lightly.
4. Check fish fillets and turn when needed.
5. Cut the baby gem lettuces in half a remove outer leaves and base. Add to onions, put a lid on and leave for 5 minutes.
6. Turn lettuces and add stock, a dash of water and frozen peas to this pan.
7. Add double cream to vegetables, check fish is cooked through and serve!
Nutritional information per serving:
To make this dish into a lower carb version, replace plain flour with coconut flour or ground almonds and replace frozen peas with green beans.
