This creamy fajita chicken orzo is a quick, one-pan dinner that delivers big flavour with minimal effort.

Ingredients:
130g dried orzo
350g chicken breast
1 red pepper, chopped
1 onion, chopped
1 pack fajita seasoning
1 chicken stock cube
300ml boiling water
50ml single cream
20g Parmesan, grated
Extra Parmesan, to serve
Optional: add parsley to garnish

1. Cut the chicken breast into bite-size pieces. Heat a frying pan over medium heat and cook the chicken until lightly browned.
2. Add the chopped red pepper and onion to the pan. Cook for a further 5 minutes until softened, then stir in the fajita seasoning until everything is evenly coated.
3. Dissolve the chicken stock cube in 300ml of boiling water.
4. Reduce the heat slightly and pour the stock into the pan. Add the orzo and stir well.
5. Simmer gently for 10–15 minutes, stirring regularly to prevent the orzo from sticking. Add a little extra boiling water if the mixture becomes too dry.
6. Once the orzo is cooked and tender, stir in the cream and grated Parmesan until creamy and well combined.
7. Serve immediately, topped with extra Parmesan if desired.
