A French favourite with deep rich flavours.

Ingredients:
2 tbsp extra virgin olive oil
2 onions, finely sliced
1 tbsp tomato purée
3 garlic cloves, crushed
4 fresh thyme sprigs, plus extra leaves to garnish
200g button mushrooms
8 chicken thighs (bone-in)
400ml red wine
500ml chicken stock
1 tbsp Worcestershire sauce
Method: Number of Servings 4 / Prep Time 15 minutes – Cook Time 1 Hour
1. Heat the olive oil in a large, deep pan. Add the onions and fry over a medium heat until soft (8-10 minutes) Add the tomato purée, garlic, thyme, mushrooms and chicken and cook for 7-8 minutes
2. Pour in the wine, stock and Worcestershire sauce and simmer (uncovered) for 40 minutes or until the chicken is tender, stirring occasionally, season with salt and black pepper.
3. Garnish with thyme and parsley
