Ingredients:
10g butter
1 onion, chopped
1 clove garlic, finely diced
½ tsp ground cumin
½ tsp ground coriander
½ tsp turmeric
¼ tsp chilli powder
400g tin of chickpeas
400g tinned tomatoes
Thumb sized piece of fresh ginger, grated
50g chopped fresh coriander
Method: Number of Servings 2 / Prep Time 15 minutes – Cook Time 25 minutes
1. Heat butter in large saucepan. Add onion and garlic and fry until golden. Add cumin, coriander, turmeric and chilli powder and cook, stirring, for 2 minutes
2. Add chickpeas and tomatoes to pan. Simmer for 10 minutes until thick
3. Add ginger and stir well. Serve hot, garnished with coriander.
4. Optional – serve with rice
