The perfect fakeaway!

Chicken Korma Curry

Ingredients:

1 large white onion, finely chopped
2 garlic cloves finely chopped, or 1 tsp lazy garlic
1 tsp dried ginger, or a thumb-sized piece of fresh ginger, finely chopped
4 tbsp korma paste
4 skinless chicken breasts, cut into bite-sized pieces
50g ground almonds
2 tbsp sultanas
300ml chicken stock (we used Knorr Chicken Stock Pot) and boiling water
2 tbsp 0% Greek Yogurt
Coriander chopped for serving (optional)
Salt & Pepper to season

Method: Serves 4 / Prep time 5 minutes / Cook time 30 minutes

1. Cut the chicken breast into bite size pieces and add to the frying pan, along with your chosen frying oil

2. After 10 minutes or once the chicken is cooked through, add the chopped onion, garlic and ginger.

3. Cook for 5 minutes. Then add the korma paste, the chicken stock and the ground almonds.

4. Leave to simmer for 10 minutes then add the sultanas.

5. Remove the curry from the heat and add in the Greek yogurt, add back to the heat and simmer for 2 minutes.

6. Serve with fresh coriander and season with salt and pepper (optional)
