Ingredients:
2 tsp extra virgin olive oil
20g ginger (grated)
2-3 cloves of crushed garlic
1 onion (red or white, diced)
1 chilli (finely chopped)
1 chicken breast (diced)
1 pepper (chopped)
1 1/2 broccoli stems (cut into florets)
100g sugar snap peas
1 carrot (chopped)
1 tbsp soy sauce
Method: Number of Servings 2 / Prep Time 15 Minutes – Cook Time 15-20 Minutes
1. Heat the olive oil in a wok or pan
2. Fry the ginger, garlic, onion and chilli for 2-3 minutes
3. Add the chicken and fry until it is cooked (5-10 minutes)
4. Add the rest of the ingredients and fry until the vegetables are tender (2-3 minutes)
5. If the dish appears dry, add small amounts of water
