No flour pancakes! instead made with rolled oats, bananas and cinnamon. Ideal at anytime or traditionally served on Shrove Tuesday!

Ingredients:
3 ripe bananas
3 medium eggs
100g rolled oats
1 tsp cinnamon
1 tsp butter
Method: Number of pancakes 4 / Prep Time 10 minutes – Cook Time 5-10 minutes
1. Mash the banana and mix it well with the eggs, oats and cinnamon. Mix until a smooth batter is formed
2. Melt the butter in a large, flat frying pan
3. Add the batter to the pan a ladle at a time
4. Fry on a low heat for 3-4 minutes before gently flipping each pancake ad cooking for a further 2-3 minutes
5. Serve, top with fruit if desired e.g. blueberries and raspberries
