Thai Turkey Meatballs in a Creamy Coconut Curry Sauce

Thai Turkey Meatballs in a Creamy Coconut Curry Sauce

This easy one-pan meal is packed with flavour, naturally satisfying, and perfect served with steamed rice or noodles (or a low carb alternative) for a delicious weeknight dinner.

Ingredients

Meatballs:
500g minced turkey
3 cloves garlic, crushed
1 tbsp of freshly grated ginger or pureed ginger
4 spring onions, thinly sliced
1 egg
4 tbsp panko breadcrumbs
2 tbsp dark soy sauce
Salt & freshly ground black pepper
1 tbsp extra virgin olive oil

Curry Sauce:
2 tbsp red thai curry paste
1 can coconut milk
1 red pepper, sliced
1 packet of sugar-snap peas
1 tbsp of lime juice
Coriander or Parsley to garnish

Method

Cost - £2.46 per serving 

  1. In a large bowl, combine the turkey, garlic, ginger, spring onions, egg, breadcrumbs, soy sauce, and a good grind or two of salt and pepper. Gently mix everything together using your hands or a spoon until just combined. Avoid overmixing, as this can make the meatballs dense rather than tender.
  2. Using slightly damp hands, shape the mixture into small meatballs about 1 inch in diameter. You should have approx. 16 meatballs. Place them on a plate and set aside.
  3. Heat the oil in a large frying pan over a medium heat. Add the meatballs in a single layer and fry for about 10 mins, turning gently, until they are lightly browned on all sides. They do not need to be fully cooked at this stage. Remove the meatballs from the pan and set aside.
  4. In the same frying pan, add the red curry paste. Sauté for about 1 min, stirring constantly, until fragrant. This step helps release the essential oils in the curry paste, deepening its flavour.
  5. Slowly pour in the coconut milk, stirring to fully dissolve the curry paste into the liquid. Bring the sauce to a gentle simmer over a medium-low heat.
  6. Return the browned meatballs to the frying pan and simmer for approx. 5 mins. Add the sliced pepper and sugar-snap peas. Cover and let everything simmer gently for about 10 mins, until the meatballs are cooked through and the sauce coats them beautifully.
  7. Take off the heat and stir in the lime juice to brighten the flavours, and adjust seasoning if required.
  8. Optional - Garnish with chopped coriander or parsley.
