This tasty tuna dish is super refreshing and is a great mid-week meal.

Ingredients:
4 tuna steaks
50ml extra virgin olive oil
For the sauce
2 garlic cloves, finely chopped
1 red pepper, core removed and deseeded, cut into 1cm strips
4 large tomatoes, skinned, deseeded and chopped
100g black olives
1 bay leaf
1 tsp dried oregano
1 sprig of rosemary
1 dried red chilli, crushed
1 large glass of dry white wine
salt and pepper
Method: Number of Servings 4 / Prep Time 15 Minutes – Cook Time 45 Minutes
1. Begin by heating a heavy bottomed pan, add the olive oil and briefly fry the steaks on both sides to seal in the juices.
2. Remove the steaks with a slotted spoon or tongs and set aside in a warm place covered with tin foil.
3. Return the pan to the heat, replenish the olive oil if necessary, and fry the pepper strips for about 5-7 minutes until they start to soften. Add the garlic and cook for a further 3 minutes, but do not let the garlic colour.
4. Add the tomatoes, olives, oregano, rosemary, crushed chilli and bay leaf. Stir in the white wine and return the tuna to the pan.
5. Make sure the sauce covers the steaks.
6. Cover the pan with the lid and allow it to gently simmer for 15-20 minutes. At the end, the tuna should be tender and the sauce fresh tasting.
7. Adjust the seasoning being generous with the pepper and serve immediately.
