A deliciously simple low carb and paleo-friendly granita.
The beauty of this recipe is that it can be made entirely sweetener-free if preferred.


Ingredients:
For the granita
1 cup fresh organic raspberries
The juice of half a lime
10 drops liquid stevia or diet compliant
sweetener to taste
2 cups filtered water
For the coconut cream
1 cup coconut cream, chilled
4 drops stevia or diet compliant
sweetener to taste
1 tsp lime juice
Method: Number of Servings 6 / Prep Time 15 minutes plus 3 hours freezing time
1. To prepare the granita, add the raspberries, stevia and lime juice to a food processor. Blend to create a purée. Add the filtered water and blend again until well combined. You can taste and adjust sweetness as desired.
2. Select a freezer-proof tray. Pour the raspberry and lime mixture directly into the tray. If you would prefer the granita to be free from raspberry seeds, pass the mixture through a sieve into the tray, squeezing through the pulp but discarding the seeds.
3. Carefully place the tray in the freezer and leave for one hour. After an hour, churn the semi-frozen mixture with a fork. Return to the freezer and repeat this process for a further two hours or until you have set granita crystals. Churn for a final time.
4. Before serving you can prepare the whipped coconut cream. Add the chilled coconut cream, lime juice and stevia to a bowl. Whisk together until fluffy and creamy. Taste and adjust sweetness and add more lime if desired.
5. Divide the granita between individual serving bowls and top each with whipped coconut cream. Store any remaining granita in the freezer in an airtight container.
Notes: We have used stevia drops as a Paleo and Keto-friendly option to sweeten our dessert. You can swap this for an alternative diet-compliant sweetener such as maple syrup or honey for AIP, adjusting quantities to taste. If you prefer
not to add any sweetener, then you can omit entirely adding more fruit if preferred. We have topped our granita with whipped coconut cream to make the recipe dairy free. You can of course swap this for a regular whipped cream if this suits your diet.
