Try this hearty meal, it's full of fibre!

Ingredients:
200g pork fillet (cut into 8 medallions)
3 tbsp extra virgin olive oil
200g cabbage (finely sliced)
150g leek (finely sliced)
2 tbsp pesto
Method: Number of Servings 2 / Prep Time 15 Minutes – Cook Time 10 Minutes
1. Heat 2 tbsp olive oil in a frying pan
2. Season the pork with salt and pepper and add to the hot pan, cook for 3-4 minutes each side
3. Heat the remaining tbsp olive oil in a separate pan and cook the cabbage and leek for 5-6 minutes, stirring occasionally
4. Serve cabbage and leek onto plates and top with pork and pesto
