[Sticky] Low Carb Mince Pies

What would Christmas be without a mince pie. You can now enjoy a festive favourite with our delicious low carb mince pie recipe.

Low Carb Mince Pies

Ingredients:

Pastry Cases
150 g almond meal/flour
1 egg
1 tbsp coconut flour
2 tbsp xylitol
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg

Christmas Mince Pie Filling
1 small apple grated/shredded (approx 150g)
55 g butter
2 tbsp xylitol
1/4 tsp ground mixed spice
1/4 tsp ground cardamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
75 g almond meal/grounds
Brandy to taste

Method: Number of Servings 6 / Prep Time 20 minutes – Cook Time 20 minutes

Pastry Cases 
1) Put all the ingredients in a mixing bowl and mix together with a fork to a soft pastry.
2) Roll out in between 2 sheets of baking paper and cut each circle slightly larger than the case you will be baking them in.
3) Press the pastry circles into each case and place on a baking tray. Bake in the cases at 180C/350F for 10 minutes, then remove the pastry from each case and bake for 2 minutes on the baking tray to brown slightly.
4) Place lids on a flat sheet and bake with cases until brown 10-12 mins.

Mince Pie Filling
1) Melt the butter and the grated apple on low in a saucepan.
2) Add all the other ingredients (apart from the brandy) and heat through for a minute or two.
3) Remove from the heat and add brandy to taste (I add 1 or 2 tablespoons).
4) Once cold, divide the mixture evenly amongst the pie cases.
5) Add lids if required

Add Brandy Whipped Cream as desired
