[Sticky] Low Carb Granola

The perfect way to start the day or to enjoy as a healthy desert. A granola with all the taste but without the carbs. Enjoy with berries and full fat greek yoghurt. Yummy.

Low Carb Granola

Ingredients:

200g Mixed Nuts – chopped
100g Mixed Seeds
50g unsweetened desiccated coconut
2 tsp cinnamon
2 tbsp Xylitol or Erythritol
1 to 2 tsp of vanilla essence
50g butter (melted)

Method: Number of Servings 10 / Prep Time 10 minutes – Cook Time 15 minutes

1. Mix all the ingredients together in a large baking tray. Bake for 10 to 15 mins in the oven at 180C but keep on checking and stirring as it can burn quite quickly. Cook until slightly brown.
2. Leave to cool in the tray and then transfer to an airtight container.
3. It will keep very well for at least 2 to 3 weeks.
4. Sprinkle onto full fat Greek yoghurt and possibly add some berries.
