This Mediterranean recipe is super tasty and packed full of flavour!

Ingredients:
2 peppers
1 large sweet potato
2 courgettes
1 red onion
1 tbsp olive oil
8 lean lamb cutlets
1 tbsp thyme leaf, chopped
2 tbsp mint leaves, chopped
Method: Number of Servings 4 / Prep Time 15 Minutes – Cook Time 30 Minutes
1. Preheat the oven to 220C/200C fan/gas 7. After you have sliced the vegetables and sweet potato place them on a large baking tray and cover with olive oil and season with salt and pepper.
2. Whilst the vegetables are in the oven, mix the lamb into the herbs and season with pepper.
3. Take the vegetables out of the oven, make room for the lamb and put the tray back in the oven for 10 minutes.
4. After 10 minutes turn the lamb cutlets and cook again for 10 minutes until the vegetables and lamb are lightly charred. Mix together and serve.
