These savoury muffins are a great snack, and super tasty!

Ingredients:
8 eggs
350ml milk
30g spinach
50g feta cheese, crumbled into large cubes
2 large red peppers , cut into cubes
1 tsp garlic powder
2 tsp dry parsley
Method: Makes 6 muffins / Prep Time 20 minutes – Cook Time 30 minutes
1. Preheat the oven to 190C and prepare a non-stick muffin tray
2. Cook the red peppers in the oven until they soften (8-10 minutes)
3. Distribute the spinach, feta and red peppers between the muffin moulds
4. Beat the eggs and milk together with the garlic powder and parsley
5. Pour the egg mixture into the muffin tray until the moulds are 3/4 full
6. Bake in the oven for 15-20 minutes until the egg is fully cooked and golden on top. Allow to cool for 10 minutes before turning out
