[Sticky] Cod, Cherry Tomato and Green Olive Tray Roast

This dish looks super impressive and only takes 40 minutes to cook! We recommend serving with a salad.

Cod, Cherry Tomato and Green Olive Tray Roast

Ingredients:

1 red onion, cut into thin wedges
750g cherry tomatoes
4 tbsp extra virgin olive oil
6, ~125g pieces of cod loin
6 slices parma ham
18 green olives
flat-leaf parsley chopped to serve

Method: Number of Servings 6 / Prep Time 15 Minutes – Cook Time 40 Minutes

1. Heat the oven to 220C/fan 200C/gas 7.
2. Put the onions and tomatoes in a shallow roasting tin or dish. Season, add 4 tbsp of olive oil and toss together. Roast for 15 minutes.
3. Wrap each piece of cod in a slice of Parma ham. Add the olives to the tray and sit the cod on top of the tomatoes.
4. Roast for another 15 minutes until the cod is cooked through and the Parma ham has crisped up.
5. Scatter with parsley
