[Sticky] Beef Chilli with Low Carb Ciabatta

Think you can't enjoy bread on a low carb diet...think again, if you love a garlic bread with a chilli this is the recipe for you. A tasty treat for any occasion.

Beef Chilli with Low Carb Ciabatta

Ingrediants:

Garlic bread
1 packet of Dr Almond ciabatta mix (Nutritional information –  https://bit.ly/32PNubO )
2 tbsp extra virgin olive oil
400 ml of water

 

Chilli
500g beef mince (not lean)
1 onion
4 cloves garlic
Chilli to taste (I used 2 tsp lazy chilli)
1 each of red, yellow & green peppers
4 tbsp extra virgin olive oil
50g butter (salted)
Oxo cube
200ml red wine
300ml passata

 

Method: Number of servings 6 / Prep Time 20 minutes – Cook Time 60-80 Minutes

For the Garlic Bread: Add olive oil to water – add mix whilst stirring and continue stirring for 1 minute. Shape into 2x ciabatta with wet hands and bake for 60 – 80 minutes at 180C (without opening door)

Once cooked, leave to cool. Meanwhile, add 6 teaspoons garlic purée to 150g butter and mix. Add parsley. Slice cooled ciabatta (leaving it connected at the bottom) and spread generously butter into the slits. Close and wrap in aluminum foil and cook until piping hot and crispy at the edges.

For the Beef Chilli: Fry onion, garlic & chilli. Add mince and stir until browned. Add chopped peppers and fry off. Add passata, butter, oxo cube, red wine and simmer until reduced and thickened. Serve with grated mature cheddar cheese sprinkled on top Optional.
