[Sticky] Bacon, Black Pudding & Onion Quiche

A delicious hearty low carb quiche, made by our Operations Manager Helen!

Bacon, Black Pudding & Onion Quiche

Ingredients: 

Pastry
100g Ultrafine FiberFlour
50g Cold Butter
Cold water to bind together

Filling
3x eggs
100ml double cream
200ml water
3x rashers smoky bacon – cut into bite size pieces
1x onion – chopped
50g black pudding
100g strong cheddar cheese – grated
Salt and black pepper

Method: Number of Servings 6 / Prep Time 20 minutes – Cook Time 55 minutes

1. First make the pastry by placing the flour and butter into a large bowl and rub together until you get a fine breadcrumb like consistency

2. Add cold water a little at a time until the pastry comes together

3. Roll out to fit a 9/10” flan dish, place in the dish and trim the edges

4. Fry the bacon, onion and black pudding for about 8 minutes until they are all nicely browned, allow to cool a little

5. Put the eggs, cream, water, salt and pepper into a jug and whisk together

6. Add the fried ingredients to the pastry flan and sprinkle on the cheese

7. Finally pour in the egg mixture until the flan is full

8. Cook in a medium oven, 180c/160c fan/gas 4 for about 40/45 mins, until brown and the filling has firmed up

9. Serve either hot or cold with a lovely fresh salad
