Inspired by BBC Good Food this salad makes a refreshing change and is simple to make.

Ingredients:
1 x large orange
2.5 tsp wholegrain mustard
2.5 tsp honey
1.5 tsp white wine vinegar
1.5 tbsp extra virgin olive oil
1 large carrot
½ block of halloumi
50g watercress or baby spinach

1. Peel the orange, try and remove as much of the pith as you can. Using a small, serrated knife cut the orange into segments, catching any juice in a bowl, set the orange segments aside.
2. Add the mustard, honey, vinegar, oil and a little salt and freshly ground black pepper to the left-over orange juice and mix well.
3. Using a vegetable peeler, peel the carrot into ribbons and add to the dressing mixture, mix gently to coat the carrot strips.
4. Heat a drizzle of oil in a frying pan and add the sliced halloumi, fry on both sides until golden brown.
5. Toss the watercress or spinach with the carrots and dressing, arrange this mixture onto two plates, top with the halloumi and orange segments.
